Mother's Day Pancakes
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla essence
- 1 tablespoon white sugar
- 1 1/4 cups low fat milk
- 1 egg
- 3 tablespoons butter/margarine, melted
In a large bowl, sift together the flour, baking powder, salt and sugar. Pour in the milk, egg and melted butter and mix until smooth. Add the vanilla essence. Mix well. Heat a lightly oiled frying pan over medium high heat. Pour the approximately 1/4 cup for each pancake into the pan. Brown on both sides and serve hot with honey, cinnamon and lemon.
